It’s been a busy last few months! Holidays, work and life and general has caused an absence of updates on Pizza Journey. So to kick start the site again, I thought I’d put all the posts into one story. A simple story told in photos of all the fun and cooking that is to be had in a backyard wood oven. We’ve certainly been making the most of it at Chateau Toogood Lawrence. With everything from Paella to Roast Duck…

A long weekend! Starting at 7.00am Saturday with a visit to Bunnings to get compressed cement sheet and pre-mix concrete before Ben (renderer dude)’s arrival. The day ticked along with the measuring, cutting and placement of the Hebel slab, followed by cutting and placement of the cement sheet. Whilst I swore like a sailor building the formwork, Ben (Grub) worked on the first coat of render for the oven stand. Finally at 2.00pm I’d finished one section of formwork and…

An Adelaide institution, A Rundle Street mainstay and one of the biggest dining rooms in the city, it’s Brunelli’s. With a wood oven that’s been cranking out pizzas since before Jesus made his first outdoor setting, Brunellis is the latest pie joint to go under the scrutiny of 3 hungry designers. Unusually two of us visited Brunelli’s only a week previous to get some pies for a cocktail party. We normally don’t pre-sample our test restaurant, but like the proverbial mountain, it was there. On that occasion, lubricated…

Base Pizza, the new venture by Adelaide hoteliers, Vicki Franzon-Lewis and Tony Franzon – owners of The Bath Hotel has opened it’s doors to an eager public and a hungry design crew. In this month’s installment of Zynke Pie Day we head to Base Pizza. What was once a Auto spare parts store sharing a wall with the Bath Hotel water feature, is now a wood oven pizza joint serving small plates and cocktails. Opening onto the beer garden deck…

The outdoor entertaining / cooking / area is now waterproof. Thanks to Adam Riley (Riley Ceilings) we got the job done in under 2 hours. Fantastic work considering the massive weekend we’ve all had. Verandah has 2 clear sheets and the rest is zinc corrugated steel and serve us well over the coming years of using the new space. Luca even had a go at screwing down a sheet!

After some further research for recipes for the Pizza Oven I came across some techniques for cooking paella in a WFO (wood fired oven). Traditionally the Spanish use olive or orange tree prunings as the smoke from the wood imparts a special flavour onto the food. As I’m only 6 weeks from firing up our oven and spring has just begun I figured now would be the time to get some olive wood of my own. I started by looking…
